A cette \u00e9poque le brassage \u00e9tait fait dans des monast\u00e8res. C\u2019est seulement en 1250 que fut lev\u00e9e l\u2019interdiction du brassage hors monast\u00e8re. D\u00e8s le d\u00e9but, les moines tch\u00e8ques utilis\u00e8rent du houblon, ce qui ne fut pas le cas dans les autres lieux de brassage qui ne se mirent \u00e0 inclure l\u2019ingr\u00e9dient seulement quelques centaines d\u2019ann\u00e9es apr\u00e8s. Le houblon tch\u00e8que devint un produit de luxe car les autres pays ne furent pas en capacit\u00e9 d\u2019en produire eux-m\u00eames pendant plusieurs si\u00e8cles. A la suite de la lev\u00e9e de l\u2019interdiction de brassage en dehors des monast\u00e8res, les villes de Ceske Budejovice (1265), Plzen (1290) et Svitavy (1256) furent les premi\u00e8res \u00e0 obtenir des autorisations et purent produire les premi\u00e8res bi\u00e8res tch\u00e8ques non-monastiques.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-687 size-full\" title=\"Monks from Brevnov\" src=\"\/wp-content\/uploads\/2016\/10\/beer-monks.jpg\" alt=\"Monks from Brevnov\" width=\"600\" height=\"400\" srcset=\"https:\/\/www.beerprague.com\/wp-content\/uploads\/2016\/10\/beer-monks.jpg 600w, https:\/\/www.beerprague.com\/wp-content\/uploads\/2016\/10\/beer-monks-480x320.jpg 480w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<h3>La premi\u00e8re bi\u00e8re tch\u00e8que<\/h3>\n<p>La bi\u00e8re est une partie importante de la culture tch\u00e8que et \u00e9tait nomm\u00e9e dans les premi\u00e8res brasseries pivo ou \u00ab\u00a0bi\u00e8re blanche\u00a0\u00bb. La technique de brassage utilisait des levures de fermentation par le haut r\u00e9sultant une bi\u00e8re trouble. Stare pivo ou \u00ab\u00a0vieille bi\u00e8re\u00a0\u00bb \u00e9tait brass\u00e9e avec des levures de fermentation par le bas. Ces bi\u00e8res \u00e9taient brass\u00e9es \u00e0 des temp\u00e9ratures basses plus longtemps. De cette technique r\u00e9sulte les premi\u00e8res bi\u00e8res blondes. Il semble que les premi\u00e8res bi\u00e8res blondes sont originaires de Boh\u00e8me et ont travers\u00e9 la fronti\u00e8re vers la Bavi\u00e8re au 15\u00e8me si\u00e8cle.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-672 size-full\" title=\"Old beer\" src=\"\/wp-content\/uploads\/2016\/10\/pivo_hist.jpg\" alt=\"Old beer\" width=\"400\" height=\"294\" \/><\/p>\n<p>\u00a0La bi\u00e8re blonde et son brassage tomb\u00e8rent finalement en d\u00e9su\u00e9tude et de nombreuses brasseries furent d\u00e9truites au cours de guerres. La brasserie Brevnov fut d\u00e9truite en 1420 et reconstruite seulement 300 ans plus tard. Malgr\u00e9 cette destruction, la tradition de brassage tch\u00e8que continua en appliquant la technique de fermentation par le haut, principalement utilis\u00e9e pour les bi\u00e8res faites \u00e0 base de bl\u00e9.<\/p>\n<h2>La bi\u00e8re blonde Pilsner<\/h2>\n<p>C\u2019est au milieu du 19\u00e8me si\u00e8cle que fut r\u00e9introduite la technique de fermentation par le bas. Ce sont les allemands qui import\u00e8rent cette technique gr\u00e2ce \u00e0 de nets progr\u00e8s en termes de transport et commerce. Peu de tch\u00e8ques se rappelaient du type de bi\u00e8re que leurs anc\u00eatres avaient introduit aux Bavarois par le pass\u00e9 et ils finirent par adopter cette boisson bien diff\u00e9rente de la bi\u00e8re l\u00e9g\u00e8re qu\u2019ils consommaient jusqu\u2019alors. Les brasseries ne tard\u00e8rent pas \u00e0 brasser leur propre bi\u00e8re suivant le nouveau proc\u00e9d\u00e9. C\u2019est en 1842 \u00e0 Pilsen qu\u2019une brasserie d\u00e9veloppa une nouvelle technique visant \u00e0 s\u00e9cher le malt via une chaleur indirecte r\u00e9sultant en une bi\u00e8re plus craquante, pas aussi noire que les bi\u00e8res allemandes mais plus dor\u00e9. Les autres brasseries embo\u00eet\u00e8rent le pas et adopt\u00e8rent la fermentation par le bas esp\u00e9rant r\u00e9pliquer cette technique innovante. C\u2019est \u00e0 partir de ce moment qu\u2019un grand changement se produisit dans le brassage tch\u00e8que. Les usines n\u2019arrivant pas \u00e0 adopter la technique de fermentation par le bas finirent par fermer. Les survivants produisaient majoritairement deux types de bi\u00e8re blonde\u00a0: p\u00e2le ou sombre. Ils furent restreint \u00e0 cette production pendant 40 ans. L\u2019un des rares avantages de cette p\u00e9riode est que les tch\u00e8ques, du fait de l\u2019incapacit\u00e9 \u00e0 r\u00e9nover les brasseries, pr\u00e9serv\u00e8rent leur technique de brassage et de maltage qui avait disparu partout en Europe.\u00a0<\/p>\n<h4>L\u2019essor des mini-brasseries locales<\/h4>\n<p>Alors que le capitalisme faisait son retour dans le pays, de plus en plus de petits bars et brasseries ouvrirent. Ces petites brasseries exp\u00e9riment\u00e8rent de nouvelles techniques de brassage, de nouveaux ar\u00f4mes et all\u00e8rent m\u00eame jusqu\u2019\u00e0 revisiter les techniques incluant du bl\u00e9. Avec plus de 250 brasseries, la R\u00e9publique Tch\u00e8que a maintenu sa longue histoire du brassage de bi\u00e8re malgr\u00e9 de nombreux al\u00e9as.
